If I'm using homemade vanilla, which gives my frosting an off-white tint, what can I do to get a brilliant white? I've read that adding a tiny bit of violet color cancels out the yellow, and I've also seen white food coloring from Americolor. Any ideas? TIA!

White food coloring is titanium dioxide based, and if you are inexperienced in using it, you may use too much and throw the taste off.

Use the violet.

just add the violet a drop at a time till the icing appears whiter.

I use homemade vanilla, as far as I know there's no way to make it clear. I'll try the violet, thanks for the help! icon_smile.gif

Isn't homemade vanilla just the best? I love it.

I use the Wilton White. You just need a little and you can find it at Walmart, it's in a liquid bottle. Does not alter the taste.
