Cut up some Fresh Strawberries, mix them with an equal amount of sugar, but in a saucepan and bring to to boil..simmer for about 5-7 minutes...let it cool and then mix with your regular BC icing!! Really yummy and thick! (WIll not "seep" out on the sides of the layers on you!) Hope this helps!! ![]()
Here is my "personal" one that I use:
* Strawberry Icing
* 1 cup butter (*salted)
* 2 pound confectioners' sugar
* 1/2 cup pureed strawberries
* Strawberry Margarita mix for liquid
Butter at room temp, mix everything together adding margarita mix slowly (as you would water normally).
* *If using unsalted butter, add salt to mixture to cut sweetness! Add salt "to taste" a little at a time
Note: I put the strawberries in my coffee bean grinder, which by the way I only use for "caking".

I forgot to add that the recipe is enough to fill and cover 3- 8" layers! You might not need that much!!!!!
