I just made my first batch of MMF and wondered if I should have used my mixer. I did it by hand and it took me more than an hour to knead in the last pound of powdered sugar. Can a heavy duty mixer handle this job? BTW, I loved decorating with fondant. Not too fond of the flavor but sure love the look!

I let the KA do the job it is so much easier on your hands.

I use a hand mixer with the dough hook attatchments and it works great!! I never need all of the powdered sugar though......usually only a pound and a half and it's perfect..pliable but not sticky

Wow! I do it by hand and it only takes me about 10-15 minutes. I did it with my KA and used ALL of the powdered sugar and that was a huge mistake. You definitely don't need it all in this recipe!
I actually found it easier by hand.

Anyway, think, you got exercise, toO!!

I use my KA to mix it and then I turn it out onto a board and knead it.

I do mine by hand and it takes no time....never get the full amount of sugar in but it still is nice to work with.

I use my "hook" attachment to my kitchen aide all the time, all the powdered and have not had a mistake yet. I love the results, no sugar lumps, not a little bit. icon_smile.gif

Be careful with your KA -- I have read posts in this forum where women have said they burned out their KA by using it to mix all the sugar into their MMF.

Most gals save the last pound pf 10X to knead as necessary, but don't always use all of that pound.

i also did my first fondant yesterday...first i tried it in the KA but the powdered sugar went all over the kitchen...so i did it by hand and it was tough!!! i think my hands are still sore...then when it looked
"OK" i tried the KA again...thought it was good...let it sit overnight...when i used it in the morning it still sticks on my worktable even if i had more powdered sugar on it...how did some of you did it by hand and didn't have a hard time???? icon_biggrin.gif

I grease my hands and the tabletop with crisco when you are getting towards the end of making the MMF. No sticking and it is the perfect consistency. I never use all the sugar that is called for either though.

For the recipe, you should also try this link -

She gives great step by step instructions, and she shows you using a KA with a dough hook at the end to add the extra powdered sugar.

I do mine by hand, and it only takes a few minutes, too. Whenever I hear of someone struggling with it and not able to get anywhere near the full 2 pounds of sugar in it....I have to wonder if the full pound of marshmallows has been used. I think that's the most common problem people run into, because the marshmallow people are evil and devious and put marshmallows in bags that weigh considerably less than a pound!

I agree with you.. I always get the full bag of 10x sugar in the mmf and I always make it by hand and it comes out perfectly.. I do lather up with the crisco, not sure if that's what helps or not..

Those evil mm people!!! LOL icon_wink.gif

I actually weighed my marshmallows (was using two partial bags) so I know I had a pound. And I spent at least an hour getting all that sugar in! I did find it easier to knead if I returned the fondant to the microwave for a few seconds every so often. Sounds like we're kind of split between doing it by hand and using the KA. I'd hate to ruin my KA so I think I'll try again by hand. But I won't use all the sugar.

And I wanted to use my KA to make my first MMF cake soon. Now, I am worried to mess it up. icon_sad.gif ~Josie
