Freezing Carrot Cake

Does anyone freeze carrot cake? I have 2 large carrot cakes due friday and I want to make them ahead of time but am not sure on the freezing of carrot cakes. And if I can freeze them - how long do you let them sit out before decorating them?

I freeze all my cakes, carrot included. I wrap them while they're still warm and that holds a some of the steam in, keeping them moist. Not that this is really a problem with carrot cake icon_biggrin.gif

I usually take mine out to thaw 4 to 6 hours before decorating. Make sure you let them thaw while they're still in the plastic or all that lovely moisture will evaporate instead of staying in the cake.

Absolutely! I have frozen my carrot cake without any problems at all! I have tried two different ways: 1. wrap each cake layer in foil and then put into a zipper type bag. When you are ready to thaw, just bring the cakes to room temperature while still wrapped.

2. I have also stacked and completely frosted my carrot cake, boxed it and then put in the freezer. I thawed in the fridge overnight.

Both way worked just great!!
