Hello, I´m searching some receipes for cakes and fillings. The important thing is, it must taste very good and it must be for a fondant cake. If I make my german buttercream I have to put it in a refrigerator. And fondant may not stay that coll right?

So what are your favorites? Does anybody can give me receipes?

We´ve got no cool cellar or rooms because we´ve got no air condition icon_cry.gif

Best regards
Sabrina

I think the enhanced cake formula on here with any flavor cake mix is wonderful. How about a fruit filling like strawberry or raspberry that doesn't require refrigerating? Just suggestions and a "bump".

Thank you for your comment, but here in Germany we´ve got no flavour cake mix ore fillings like in the USA.

So I have to do it by myself and need receipes.

Best regards
Sabrina

What kind of flavours are you looking for, as a scratch baker of 20+ years, I'm sure I can give you some great recipes that work well for fondant, and with European measurings too! Just let me know and I'll see what I can come up with for you icon_biggrin.gifthumbs_up.gif

Hello bonjovibabe,

I guess I need flavours like chocolate or vanilla. It has to harmonize with fondant and of course the right filling icon_biggrin.gif

Hope you´ve got easy receipes for me!

Thank you for your help!!!

Best regards

I'm in the UK and I just use a victoria sponge cake. I fill with raspberry jam and vanilla buttercream (recipe below). I then coat with a thin layer of buttercream before covering in fondant. You don't need to refrigerate. There is enough sugar in the buttercream to act as a preservative and the fondant acts a sealant preventing the cake or the filling from going stale or turning.

4oz butter
8 oz icing sugar
few drops of vanilla essence.

Beat well together until light and fluffy. If too thick you can thin with a little milk

I have an idea section I constantly add to when it comes to creating a cake. The best way is to do an internet search on cake decorators and see what flavors and combinations they are offering. Here are a few that might inspire....

I created this one... I call it the Sophisticated Twinkie:
Vanilla sponge cake with lemon zest, brushed with rum syrup, filled with twinkie filling and vanilla buttercream

Chocolate-almond cake, chocolate ganache, and mocha buttercream

Lemon cake, lemon curd, and vanilla buttercream

Chocolate devils food cake, vanilla buttercream, and raspberries

Moist, refreshing lemon-coconut cake filled with layers of a light tropical mango cream
