Hi all...I am going to try the Viva trick for the first time today! Just have a silly question though....you don't wet the paper towel do you? Also, would it be o.k. to add extra van. extract for almond ext. My recipe calls for both and I don't have almond. Thanks soo much! I am a newbie...and this site is soo addicting! I LOVE it!!!

No do NOT wet the paper towel - use it dry! Just let the icing crumb a little (5 minutes or so) and then try it - if any of the icing sticks, wait a few more minutes and try again.

As far as the flavoring, not a problem at all. You can use all vanilla - I have a bride that asked for no almond in her icing.

Another tip. when using Viva, you do not have to press very hard. I like to wait about 10 mintue, then I use the Viva, wait a couple of more minutes and finish off my smoothing with copy paper!
