I'm thinking a making a mini "thank you" cake for someone. How big are they? How many servings? 1..2? I've never made one but would like to try a practice before giving one away.

Thanks!

depends on how many you want to serve really. I sell mini cakes that are 4" in diameter and they serve one to two people...

For ones I've done I just used my Atecto Plain round cutters and then just cuz a bunch of circles from a thin 1/2 sheet pan. Use a pastry bag to fill the layers thinly or just a spot of jam and put em together. Mine usually just fed 1 or 2 people as well
