How Long Can Batter Sit Out?

how long can batter sit out without it affecting the quality of the cake?

Not long. Once the levening agent in a batter gets wet it begins to make it's bubbles and if it's not baked, it won't rise as well.

I read in another post that it's not a good idea to let it sit out at all. Something about the dry ingredients gets together with the wet ingredients it's starts to do something and if it's set out after mixing then it will not rise good and will not be fluffy. So, I wouldn't do it. ~Josie icon_smile.gif

Does putting extra batter in the frig also cause the same probems? I usuallly just bake any extra batter but it would help if I could refrigerate and use later in the week. Was afraid it would somehow be effected though.

Oops, somebody asked this question a little further down on the forum. The answer was, don't do it- it makes for less airy cake. thumbsdown.gif
