I need a stiff tropical filling for my baby shower luau cake. I made a modified Ambrosia from the Cake Mix Dr book, but didn't feel that her filling would work. Any ideas? The cake is a yellow cake with mild coconut flavor. I was going to simple syrup it with a coconut but forgot. Can you do that after it thaws? I could just leave it out if I have a good filling. T hanks!
This probably doesn't fall under the "stiff "catagory but I just did a key lime cream filling with a coconut cake. It was delicious and a huge hit! It was key lime curd with whipped cream. I would think a simple syrup could be done after thawing it, I don't see why not.
Sure after it thaws you can do the simple syrup.
Here's a thought using the pineapple and coconut suggestion from TexasSugar. Drain crushed pineapple (in its own juice); mix either whipping cream OR Cool Whip (this is just EASIER some!) and coconut cream pudding mix THEN add the drained pineapple and some coconut! What do you think? I've NEVER done this....I just thought it sounded REALLY good. I HAVE done strawberry jello and whipping cream and it was a HUGE hit!
