How Long Can I 'keep' A Decorated Cake?

Hi

I wondered if anyone could tell me how long you can keep a fully decorated cake.

I have been asked to make a cake for a friends 60th birthday, and as there are 40 adults and 10 kids, I've decided to make 1 x 8 inch and 1 x 9 inch to make sure there is enough to go around. So I thought I would make one cake the week before (also to use as a kinda practise) and then make the other the weekend of the birthday. What do you all think? I will be decorting with buttercream, (basketweave)

You can make both sizes now and wrap them good and freeze them!! A LOT of us CCers make cakes ahead of time and freeze them. For a couple of days or even a week or more. Some say that it makes the cakes nice a moist to do it that way!

Do them both now and save you some time! icon_wink.gif

yup.. i am with stepOnmi...i always...always bake ahaed and freeze my cakes...i find them alot easier to decorate cause your not getting crumbs in your icing like you would with a cake that has just been baked that day. i absolutly love to decorate cakes but as for the baking part...it does not turn my crank....so i always bake a head so it's outta my hair and i don't "dread" the whole baking process the day i need to do the cake...

I have a dumb question about freezing cakes. Do you decorate straight out of the freezer or do you let it defrost?

Your question is how long will a "fully decorated" cake keep which is a good question I am finding out for myself right now. Last week I had a fondant cake to make for one of my classes and had no where to go with it once it was all done. Everyone is cake laden ever since I started classes the first of the year. ha!
Anyway, I ask my instructor how to properly freeze a fully decorated cake and this is what she told me;

Place cake in a cake box.
Wrap box very very well in plastic wrap.
Wrap box in two layers of heavy duty foil. Make sure all seams are closed.
Wrap box in heavy brown paper such as brown paper or brown grocery bag paper.
Place in freezer with a fresh box of baking soda to absorb odors.

Don't know how long it will keep like this but my test is to take it out in one month and see how well the cake survived. I'll be posting the results here once it is unthawed and we cut into it.

I was told it should keep well for at least 2 weeks using this method. Past that no one seems to know.

i decorate mine right out of the freezer...i have never let a cake defrost and i've never had a problem or a complaint.
