Mascarpone Frosting?

I am making tiramisu cupcakes for a party tomorrow. The recipe I'm following (from the book "Crazy About Cupcakes") includes a tiramisu cream frosting that uses raw eggs. However, I don't want to use raw eggs.

Anyone have any good mascarpone frosting recipes? I need something that I can pipe on top, so not TOO gooey. Thanks, all!

One time when I wanted to make a peanut butter mousse I used cream cheese (homemade) in place of the mascarpone cheese and it came out find.

Could you look for a cream cheese icing and just use that???

I was thinking about maybe just using my regular cream cheese recipe and substituting mascarpone instead. I was just wondering why the eggs are in the recipe and if there's something I can substitute instead. Maybe pasteurized egg whites?

I made some cupcakes that had a mascarpone frosting, Giada DiLaurentis recipe, you could probably do a search at the food network website. It was really good, but I think it had honey in it so it may need some tweaking for tiramisu.

I have this one saved but don't ask me from where, I just cut and paste with no directions. icon_razz.gif Haven't tried it yet but this one has honey, too (maybe it's Giada's? I'll look over at FN.....) Let me know if you like it, I's still like to try it. I love mascarpone. thumbs_up.gif
