This may be out in the forum archive but I tried searching and it was taking too long, so pardon me for asking again if it's out there icon_smile.gif

I can get my icing smooth but I've been having problems with air bubbles in the frosting making the smoothing very difficult. I've tried doing the BC frosting (1/2 crisco & 1/2 butter recipe) ahead of time and frosting directly after making it. I also make my frosting with my Kitchen Aid on the lowest setting. I've got a wedding cake coming up and need to figure this out ahead of time. Any suggestions? Thanks in advance!!

The only thing I can think of right now is how long you mix it for; try not to mix it for very long.

Be sure your icing bowl is full to slightly over the paddle (don't use a whip). This will keep more air from being incorporated in the icing. I usually make a couple of bowls at a time so i can always keep my bowl full.
