Wrap the cake in a few layers of plastic wrap and then a few layers of aluminum foil. When you are ready to defrost, just put the cake (still wrapped) on the counter until it comes to room temp. Every time I have tried to decorate one frozen, when it thaws out I get that buldge inbetween the layers.

I decorate mine frozen all the time. Never had a problem. In fact, I like it better because there are less crumbs to deal with. Just make sure you torte (if you're going to torte) before freezing it.

If you're torting before you freeze them... are you separating the torted layers with a sheet of parchment/wax paper OR keep them stacked cake on cake?

Excuxe me for jumping in....but I saw your question...and I freeze mine with success. I torte them and wrap the layers separatly. I also simple syrup before wrapping, this keeps them very moist!

I usually bake a day or two before decorating. After my cakes have cooled on the rack, I slide the whole thing into a clean garbage bag, wrap it closed and stick it in the freezer. When I'm ready to decorate, I simply take it out of the bag and go for it. I tend to decorate frozen as I get less crumbs and carving is much easier. I don't feel like I waste as much plastic wrap and aluminum foil and I can reuse the bag in the g-can.

wow...thank-you wyat!!!!! i have been baking and freezing cakes for years...i'm like you, i find it easier to decorate a frozen cake..less crumbs. i pull it outta the freezer and use my big "icer tip"....so i don't even crumbcoat. i just bake my cakes...fill them and put them in the freezer, the filling keeps the cake soooo moist! anyhoo, i have never ever thought of the garbage bag...your awesome...no more waisting saran wrap for me!!!

If you use buttercream for the filling (then freeze with the buttercream in it) does it still taste good? I just think the buttercream would taste bad??
