I usually fill mine 3/4 full too and it's always fine. I have have'nt made an 11x15 yet so I can't offer you much advice. Good luck!

I have only ever used 2 cake mixes for this pan and have never had a problem.

Wilton's website

http://www.wilton.com/cake/cakeprep/baking/times/party_2inch.cfm

says one 2" layer in an 11x15 pan should be about 11 cups of batter (I think box mixes usually yield from 4 to 6 cups but not every one is the same).

Hope this helps even a little!

I also always use 2 mixes and it is perfect for that size. I use 2 1/2 mixes for the 12x18 pan.

I use an 11x15 a lot and have always used 2 boxes unless I am making a white cake. Then I use 2 and a half.

Are you just using mixes? What mix are you using? Are you adding anything to the mixes?

I add pudding and an extra egg and 2 mixes does ok, 2 1/2 bakes a nicer higher cake.

3 mixes and it's not 3/4 full sounds a little odd though.

Pesonally, I stick to the 4 cups per box rule and go from there. When I actually measure the batter, I get better results than the 3/4 rule.

is it a 2" deep pan or a 3" deep pan?

for the 2" pans, I use 2 mixes for the 11x15 and 3 mixes for the 12x18.

I use BC mixes and use
1 1/2 for 9x13
2 for 11x15
3 for 12x18

Your rule of thumb is incorrect (according to Wilton).

2" pans should be filled 1/2 to 2/3 full.

But I always measure the cup amount according to the Wilton charts (which fills the pan 2/3 full).

3" pans should only be filled 1/2 way.

If you wish to overfill the pans, you should collar the pans:
