I was wondering if you could share your favorite poppy seed cake recipe. I was hoping to make one for a co-worker who is leaving. I have never made poppy seed cake and I plan to make these as cupcakes. So please help? It can be from scatch or mix. Angel food, yellow, white, lemon, almond or whatever is great.

I love this one, the yoghurt makes them moist and tender:
LEMON POPPY SEED YOGURT MUFFINS
1 3/4 c. flour
1/2 c. sugar
1 tbsp. grated lemon peel
1 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
1/8c poppy seed
1 (8 oz.) lemon yogurt
6 tbsp. butter (melted & cooled)
1 egg, room temperature
1 tbsp. fresh lemon juice
GLAZE:
1/2 c. fresh lemon juice
1/4 c. powdered sugar
2 tsp. grated peel (opt.)
Preheat oven to 400 degrees. Prepare muffin tins with cooking spray. In a large bowl combine flour, sugar, lemon peel, baking powder, soda, salt and poppy seed. In a small bowl whisk together yogurt, butter, egg and lemon juice. Add to dry ingredients. Fold and mix gently until just moistened and combined. Spoon into tins until 3/4 filled. Bake 20 minutes. Cool in pan 5 minutes. Remove to wire rack.
and here's one for a box mix:
LEMON POPPY SEED MUFFINS
1 lemon cake mix
1 sm. vanilla pudding mix
1 c. boiling water
1/2 c. oil
4 eggs
1/3 c. poppy seeds
Mix only until moist. Bake at 350 degrees, mini muffins bake 7 minutes (makes 96) or regular size muffins bake 20 to 25 minutes (makes 24).
I forgot to say, I know these say muffins, but there is nothing stopping you making them in cupcake cases
, they will probably be done a bit sooner though! ![]()
The recipe I use is:
DH Lemon cake mix
Water and oil called for on box
4 eggs
small box of lemon pudding
2 Tablespoons Poppy Seeds
