I am making a wedding shower cake (beach theme) that will have chocolate shells placed all over it ( with some gaps here and there - so not completely covering the whole cake) Any idea how to charge for the chocolate shells? I am assuming a flat fee? The cake is to serve 75 ppl. It will be 3 layers - 12, 9 & 6 inch. I have no idea how many I'll have to make yet - but the shells she just wants plain white with maybe some pearl dust on them. I was thinking $25 flat fee. Does that sound right?
My first thought is that $25 is too low. How much money will you have in candy melt? I like Merckens and they are good but more expensive than Wilton. Also think about the time to make that many shells.
I would make up some shells and place the on upside down cake pans, which have been stacked like the real cake will be. You could place some shells around and just keeping moving the shells and counting. For instance, I would place so many in a corner and right down that I need 4 shells in the bottom tier corner and so on. Does that make sense?

I make my own shells and also add pearl dust to them. My shells are very detailed and (in my opinion) are worth more than the basic molds you can find out there. I charge $14 for 1/4 lb for my shells. They are very detailed and a lot of works goes into them. I would check out some local shops on their truffles, and maybe use that price or bump it up more. account for how much time is put into them.
Thanks for the replies - that's a good idea for how to determine how many I will need.
She just wants them plain white- those shells are beautiful in that picture- but she doesn't want them that authentic. So I guess it will be less time spent on the details of the shells - I'll just have to make the shells all white and then apply the pearl dust.
