My 6 Day Old Cake Is Still Edible!

We've been discussing how long we can keep a cake, so I have kept this small one in a Rubbermaid cake carrier since last Sunday. Today I got it out and cut it, and ate some of it. The MMF still looks good, but has gone a little soggy and sticky, especially around the bottom. The BCT has held up well and looks fine, but is also sticky underneath. The bc piping is in good shape. The cake itself is still good, a little dry but not bad, just a little soggy on the outside edges where the icing/fondant have soaked into it. But it was still looking good, and tastes okay!

So much for my experiment, the cake is now toast! Hope this might help a little when we are trying to figure out how early to bake and/or how long we can keep them fresh! Janice

fondant is really not meant to be kept in the fridge. It can be kept there for a a day or so, but will get soggy.

The cake was not in the refrigerator, just sitting in the container on my dining table. Janice

what if you left it out on the counter uncovered... i covered a piece of mmf cake and it turned soggy in a day. i've left a cake sit out for at least 3 days already and it was still hard but easy enough to cut through... the cake was still moist because of the barrier mmf put up... anyone know if it can last even longer?

GCG, In that case, it would probably have been better to leave it uncovered, or at least not completely closed up in the container! Maybe after 3 or 4 days it could then be closed up and still not get soggy but keep a while longer. Next time I'm baking I'll make a little cake and give that a try, we need to know how long we can keep them looking and tasting good! Thanks for your input. Janice
