How Many Layers????

I'm just wondering...when you all make cakes for say a birthday and someone orders an 8" cake. I usually charge between 40-50$ for this size cake covered n fondant and decorations. My question is... should I be making a 6" high cake or a 3" high cake?? My pans are 3" so with a filling the cake would be about 4" high and if I do 2 layers (which ends up being 4 layers with the torting) then it's about 7" high with the filling.
What do you guys do??

I usually just do the two 3in. layers w/o torting, just filling the two layers with those types of cakes. If the client specifies that they want the four layers or it's for a very special occassion, then I may torte both layers and filll.Hope this helps!

Yep, I say 2 layers. I think a Sheet cake is the only cakes I don't double up on.
