I am planning on making the S'more cupcakes from the Wilton Cupcake Fun book that are listed on page 98. I'm taking them to a Girl Scout Leader Award Thank You Dessert Fest. Any ideas on what type of icing would be good on them? Thanks for any suggestions icon_biggrin.gif

Plain, old fashioned, chocolate ganache spread lightly.

I've never made ganache. Is it easy to do?

Any other suggestions? The cupcake will be chocolate with mini marshmallows and graham cracker pieces in the center.
I"m stopping by the store on the way home to buy my ingredients.

Check out the ganache recipe here on CC, it's easy and yummy.

Could you use marshmallow fluff and pipe it on top, then if you have one of those kitchen blow torches or maybe place on top rack of oven on broil and brown the tops. Just like when you make smores over the camp fire, just a thought.

That is perfect! I love that idea. For christmas my husband gave me a kitchen torch so I can use it.
I will try piping it on tomorrow and torch it before I leave. Thanks!
