If I mix some Pollaner strawberry all fruit with the 1/2 butter, 1/2 crisco buttercream recipe to use as a filling, can it sit out for a couple of days once it's in the middle of the cake and the cake is iced?

I tried it once and after a day or two, the cake got a little soggy around the filled area. Does the cake have to be refrigerated once it's filled for this not to happen, or is it just what happens when you add jam to buttercream?

I need to make and decorate this cake a couple of days in advance and it will have to sit on my table in a cake box. Think it will be a problem?

Hi!

I would not let mine stay out that long. It is always best to refridgerate as long a possible when a cake has filling. Most wedding cakes, I decorate the evening before and deliver that next day. That is the longest that I am comfortable have a filled cake left out. A full 24 hrs should be good. If you need to do a little farther ahead, I would reccomend putting it in a cooler.

Good luck,
Dawn
