OMG - Do I have butterflies! I realized this morning on the way to work that I'm starting my first professional cake tomorrow, it's due Saturday. I'm taking a day and a half off of work to make my brother and his new wife the best cake ever. I'm doing it together with the brides daughter. We've never worked together on a cake so it will be different as I've only done cakes by myself.
It's a three tiered square cake, covered in fondant with satin ribbon and chocolate roses. I've never had a problem doing a cake before but now I just got very nervous! What if something goes wrong like the cakes don't bake good or I mess up the fondant (that I never applied to a square cake), or it falls in crashes in the trunk or worse calapses at the wedding.
Then what do I charge - I've never done a wedding cake before. It's 10", 8" and 6" square. The top will have a bouquet of roses.
Oh I'm so nervous and the butterflies are just a rumbling - do you ever feel like that?
I did get butterflies with the 1st wedding cake I done. I still get them when I do regular everyday cakes for people I don't know. I am just worried they won't like the cake.

My cake for Saturday is not "professional" - it's a free cake for a friend of my mom's at church, that couldn't afford a reception and one is being thrown for them - but it's my first wedding cake! I've only done a stacked cake once, for my daughter, and didn't know anything about supports yet - just winged it! It was lopsided, etc, but she didn't care. I really want this to be perfect - what it looks like speaks to my talent and if others would be interested in buying from me! AHHHH!! - I totally get what you're saying!!! ![]()
When I have a cake and catering event, I start to get "antsy" in the 3-4 hours before final set-up. My crew and family call it "Melt Down - Phase 2!" I'm mostly afraid I'm going to forget something. Twice I've had to call hubby to have him bring me my microwave so I could melt the chocolate for the choc fountains! Now everytime I call him from a wedding, he answers the phone with "what did you forget?"
I have never been good at stacking cakes ... so usually I don't. I stick to sheet cakes and stay away from wedddings. I would definitely get butterflies doing a stacked cake.
Oh yeah, I've got butterflies alread for the wedding I'm doing in August. BIG TIME BUTTERFLIES!! I'm the personal attendant to the bride and I actually set the bride and groom up for their first date (am I good or what??) so they are very close friends of mine and I will know most of the people there, too. Talk about pressure!!
Then I'm completely nuts. I made an Easter basket cake for FAMILY, and I had three different dreams about forgetting the cake or doing it wrong, and the night before easter I was all jumpy. On the rare occasion that someone actually buys a cake from me, I'm a complete loonie.
Butterflies? More like ELEPHANTS! It's very nerve wracking, this cake decorating thing. So it's perfectly normal that you're feeling this way.
But I'm a firm believer in the power of positive thinking. My son is a pitcher for his little league team. I always tell him to try positive visualization - see himself standing on the mound, executing the perfect wind up and watching the ball sail directly through the strike zone. It really helps him.
You can apply the same thing to cakes. The next time the elephants start stomping around in your stomach, stop, close your eyes, and breathe. Sit quietly and visualize yourself calmly constructing your cake. See it come together from start to finish, perfectly level, beautifully decorated, safely delivered. Imagine the joyful looks on the faces of the bride/groom/guests... feel the pride and sense of accomplishment. Really feel it. Then smile to yourself and get back to work!
Sorry if this sound too airy-fairy, but it works for me and I've never had a total "crash" yet. Doesn't mean I haven't had crisis - I've just learned to keep going without freaking out!

Me too! I have a cake for this weekend and people just started calling me for wedding cakes and I'm already in a panic. I don't think I'm good enough, I'm worried it won't taste right or any number of things will go wrong! I get so worked up I don't eat, can't sleep and my husband says I get a bad case of "mad cow" when I'm in the kitchen!
