Either will work, but fondant takes longer to set up it gives you more working time and it tastes better if you use a good fondant such as satin ice, fondx, etc...
Sugar paste is better for flowers cause you can get it supper thin w/out it tearing, but it does not taste good and you have less working time
So, I gues it depends on what you need to mold
As far as making in advance I have made figures uo to two weeks in advance... You could make them even more in advance if you hads to
I've had them for over a year....fondant figures and gumpaste flowers and they still look as good as when they were fresh.....although I don't plan on tasting them anytime soon. LOL you may want to make fresher ones just in case someone wants to eat it....but if it's something that you know they will be keeping as a keepsake like a wedding cake topper or something...I say go for it. Make sure you keep them out of sunlight whatever you do...it changes the colors big time.
Do you mean fondant or gumpaste as sugarpaste is just the British name for fondant
I have made a few people and animals, I always use a 50/50 mix of both fondand and gumpaste. I feel that I get the best of both worlds. I has worked well for me. The photo in my photos of the Cinderalla and coach was all made from the 50/50.
It was done over a year ago and is still great.
