I would like to try something new with the cake I'm making for my boss. Its a chocolate 9x13 rectangle. I'm not used to filling cakes so I need your help/advice on the best way to do this. I'm making mocha chocolate icing to fill and frost it with. My dilemna is how to slice it evenly (it's 2 inches in height) and replacing the layers after filling.
TIA
Leslie

I like the Wilton large cake leveler but others prefer just a long serrated knife...just carefully slice the cake with a gentle sawing motion, and then what I like to do is slip a cake board under the layer and lift it off.... then take a round tip and put an "icing dam" around the edges of the cake. Then fill the cake, and slide the top layer from the cardboard back onto the bottom layer.

HTH...good luck!

Do you have a leveler?

I love the Wilton Large cake leveler, I use it for torting all of my cakes, no matter the size. It is really an indispensible tool. totally worth the 20 bucks or so it costs.
