did you see Duff's Yak cake on Ace of Cakes?
legs were dowels to hold up the cake board.
body was cake
head could either styrofoam or rice crispies.
to get strong thin legs, could use copper tubing or similar instead of dowels.
to get rounded underbelly -- glue piece of carved styrofoam to bottom of elevated cake board.
oh and detail the legs they look way to thin to support that big body and give it large knee joint.
antlers could be cardboard, foamcore, styrofoam or piece of gumpaste/fondant.

now imagine it turned so wall was the cakeboard.
neck would be stacked ovals decreasing a bit in size as approach head.
head and muzzle -- round stack and carved.
note the curve to the muzzle -- sort of like doing a whimsy cake.
antlers fondant covered wire /styrofoam/cardboard.
antlers would be heavy so need a central internal support (like you see duff make so many times) to attach them to. copper tube or drinking water grade PVC would work.
many cake boards and lots of dowels.
in fact would vote for building a plywood base and then creating a central support that rises up out of base and the cakes are on precut boards that slip over the support.
