What Is The Best Media For Sculpting?

I recently saw the Food Network cake challenge for their awards show and saw one of the cake artists sculpting various foods. What is the best media for doing sculpture like that?

If you want to sculpt cake, go with a pound or Maderia cake. Something very dense.

If you want real ususual shapes, they make those out of rice crispies using the rice crispy treat recipe. You just pack them very dense and carve them.
