Here is and old recipe that I use a lot.
Fluffy Yellow Cake
1 cup shortening
2 cups sugar
4 egg yolks
1 t vanilla extract
3 cups flour
1/4 t salt
3 t baking powder
1 cup milk
4 stiff-beaten egg whites
Thoroly cream shortening and sugar. Add egg yolks and vanilla; beat well. Add sifted dry ingredients alternately with milk. Fold in egg whites. Bake in 3 8-inch layer cake pans in moderate oven (350) 30 minutes.
Use a soft flour. Heavier flours cause this recipe to be too heavy![]()
For a yellow cake I'll use a Betty Crocker SuperMoist cake box and add a vanilla pudding cup. It always work for me, it's very moist and can be confused with a scatch cake!
Try the enhanced cake formula from this site http://www.cakecentral.com/cake_recipe-1599-Enhanced-Cake-Formula.html
with any box mix. I have used it with different flavors, and it is excellent- both to eat and decorate.
