Okay, so I know this seems like a no-brainer; if it's too sticky just add more confectioner's sugar. But it seems like I need to add more and more...and more... to get it to the right consistancy. Yes it eventually gets there but between melting the marshmallows (I do it on the stove), adding the color, and mixing in the sugar it takes me over 2 hours to get it right. Not to mention how much my hands and forearms hurt from kneading it!
(I considered a Kitchen Aid to help but I've noticed that a bunch of people mentioned on a forum thread that it broke theirs so that idea is out!)
I have to say that it's the second time I've done it and it took me less time than the first but I'm wondering if there are any great tips out there.

I forgot to write that it's a MMF recipe I found on this site - just the simple 16 oz. MM, 2 tbsp water, 2 tbsp vanilla extract, 2 lbs confectioner's sugar.

O hun the ka breaking from the mmf is more like an exception to the rule.
The only thing I can think of if this is happening on a consistent basis (the sticky fondant) then I would decrease my water a we bit. If it's just from the humidity or something then yeah the only way you can fix it is to keep adding more ps. Sorry hun but that's the only way to do it. Actually I like my mmf to be a little soft. Not sticky but soft
OMG I just reread your post again. Did I read correctly that you put in "2" tablespoons of vanilla??? It should be only 2 TEASPOONS hun. No wonder yer having probs with it bein sticky.
No no! I meant teaspoons. Haha - sorry. 2 teaspoons vanilla. I suppose I just have to strengthen my arm muscles then and knead. Do you mix it with a KA or your hands though? Out of curiousity, if you don't mind me asking, how long does it take you to make a batch of MMF?

I'm glad you posted this, though, b/c I also have the sticky problem. Also, if I make fondant shapes and let them dry overnight, they become soft again as soon as they are covered or wrapped (i.e. no air can get to them). I almost had a disaster with one cake b/c of this!
I am curious about the KA breaking though. I just got mine, and I wouldn't want to try MMF in it if there's a risk! Yikes! Anyone else had this problem?
I don't even have a KA, I have a cheaper brand of mixer, and it has held up to MANY batches of fondant!!! Just use it -that's what it's for girls!!! ![]()

First of all, get the mixer. Second, yes, use less water and more powdered sugar. Third, use crisco - it will help it not stick to you or your board as you work everything in. Crisco has saved my life many times! Fourth - Add some Tylose to your fondant to help it dry and to stiffen it up better. It will hold its shape much better this way! (got this tip from sugarflowers)

I use my KA that i got for christmas. It's one of those little ones from wallymart. I have made several batches and even a double batch one time. I didn't have a problem with it. It takes me bout 20-30 minutes for my MMF. I have gotten into the habit of adding about a 1/4 cup of crisco /shortening to the marshmallows. If you need a brand name for tylose, Wilton makes a product called "gum-tex" you add about a tablespoon in with the powdered sugar and mix as usual.
Gum-tex, not the Wilton Gumpaste mix? I bought the gumpaste mix to stiffen up the bow I made on my birthday cake (it may be silly that I made my own birthday cake but I wanted to! See below!) but didn't end up using it. I should have - the bow was flimsy, but nonetheless I'm glad I didn't open it yet.
So gum-tex, which is the "thinner", not gumpaste powder mix?
