I always have a problem with air in my icing I have know Idea what I'm doing wrong. Any idea's PLEASE HELP!!!!!
What kind of mixer do you use? They say if you keep the beaters completely buried in the icing, it will fix that problem. I don't make enough icing in my Kitchenaid at once to cover the beaters, so I have air bubbles. But I use a Viva papertowel to smooth the icing once it crusts slightly. Are you familiar with that method of smoothing a cake?
cindy's got it covered- this is the main problem with air in the frosting because it gets trapped amongst the icing during beating.
I use my kitchen Aid mixer and I do use paper towel's and parchment paper. and i make a double batch so my beaters are covered. I just don't understand sometimes its really bad and other times it's not. Thanks for the help.
HMMMMMM!!!!! Don't know if I've had this problem. I'd like to know what it looks like to know if what I experience sometimes is the same thing. Try reducing the speed when you beat the icing down one speed and not to beat it for a long time. My recipe just calls for a time of 5 minutes!
Not really sure how to help the problem. I'd like to know more myself.

i'm not sure that I completely understand the airbubble problem, but I usually make a double batch in my mixer, how are you putting the icing on, do you use a icing tip and bag, or do you spoon it on and then smooth it out with a spatula? If you use a bag, that may be your problem, because when I put a glob of icing down on a cake, I start there and smoth to the edges, thus bursting any bubbles that may be in there.
I've always been told the biggest cause of air bubbles is over-mixing the icing. The longer you mix it, more air incorporates into the icing which causes all those bubbles in the icing. It's the same idea as when you are making homemade whipped cream or meringue. The longer you mix it, the fluffier and more airy it gets.
I use my KA, with the paddle attachment to mix my icing and I mix it for a short a time as possible. I beat the butter and shortening very briefly first (they aren't even completely blended together, just softened), then add the rest of the ingredients and mix all together. As soon as the consistency is right and all ingredients are blended, I stop mixing immediately. HTH.
