A bit of panic is starting to set in about my first wedding cake. I keep waking up in the middle of the night thinking of new disasters that could happen. I have crumb coated with IMBC then used crusting for the final coat. The cakes are in the freezer and I'm worring how this icing is going to hold up as it defrosts??. I think I'll start building and put them in the fridge on Thurs. Anyone had experience with this kind of icing? I've never frozen it before.

I also had a nightmare that the cake wouldn't fit through the front door, but I measured and it will thumbs_up.gif

Thanks for any much needed advice!

Sue

not sure about the freezing part with IMBC because I have not done that. But, don't worry your cake will be great and taste great too!

I love the part about measuring the door - how funny. Take a deep breath and relax. If you have a problem with freezing the icing, it's going to show up way before you finish and deliver the cake. Take a repair kit and try to set up as early as possible so you can handle any problems that might come up.

Everyone is nervous with their first wedding cake. You'll do fine!!

Good Luck!

I've never frozen a fully frosted cake, so I don't know how to advise you on that. But I have frozen IMBC and that freezes and defrosts well.
