Fresh Strawberry Filling Cake Need To Be Refregerated?

Hi all,

I've a request for two tier cake which due mid of May. She wanted fresh strawberry filling and the cake will be covered with sugar paste. I intend to make the cake one day ahead and wonder do I need to put the cake in fridge (note: whether here is pretty humid lately), I understand that for sugar paste covered cake, it's best to keep at room temperature. Do you think if I cook the fresh strawberry with sugar, will it last longer at room temperature?

Would appreciate all inputs and if you have a nice recipe for fresh strawberry filling, do share if possible.

I just had this same question last week and no one could really answer me so I called a cake store near me that has some big time decorators (been on the TV Network challenge and won 2 times) I was told it's ok to leave the cake out for a few hours but that's it. Strawberries go bad really fast.

Yes you can put the cake in the refrigerator once covered with fondant. I did. Just cover it up with Saran Wrap very good. Then when you take it out take off the wrap. It will look sticky and like you destroyed the cake but let it sit for about an hour and it will look perfect.

Has anyone tried using COOKED strawberry (cooked fresh strawberry with sugar and cornstarch) as filling and leave it at room temperature for more than a day? Please please please let me know if this works fine.
