Icing Help?

I am going to make my first cookie bouquet this weekend. (I've never been a cookie maker- cakes for me!) I love the perfect icing look, but how do you acheive that? Someone told me to use royal icing- do you use it similar to color flow? I have never liked outlining and flooding with color flow because I don't like how the outline stands out from the flooding. But, if you don't outline, how do you get the color even without going over the edges?

I really want to get a bouquet made for my friend for his birthday and another for my mom for mother's day- but I want them to look good! Thanks for your help in advance!!!

When I make my cookie bouquet's - I use rolled Marshmallow fondant. (You can see my pictures) and I am just new to this, but it works beautifully. THe cookies come out looking GREAT! I love them. Then I also can just pipe on designs also however I would like. Today I also painted chocolate onto the front of my cookies and then piped on designs. I guess it's all up to!! Just be creative icon_smile.gif

If you use one consistency of icing and do your outline and then fill in immediately, there is no line. If your icing tends to overflow the edges, your cookies are not flat. Flatten them out with the back of a spatulas as soon as they come out of the oven, and you'll have a flat surface to pipe onto.

Thanks for the help. What consistency of royal icing should I use?


Also, it never occurred to me before to ask, what kind of sticks do you use for the cookies? Do they make special cookie sticks or will the lollipop sticks I have work ok?

This is the best website I've ever found- someone is always able to help me!!! icon_biggrin.gif

Well, thin enough that it flows together, but not so thin that it runs off of the cookie. Make some extras to practice so you can adjust consistency if you need to, without messing up the important ones. I use lollipop sticks (the rolled paper kind, not plastic ones!) for cookies. Wilton maks cookie sticks, but they are larger around and that requires you to roll the cookies very thick, which I don't like to do.

I make my icing the same consistency as elmers glue, that way it won't run off the edges but it will still settle. Search the articles for cookie bouquets there is some good info on how to frost them!

I use bamboo skewers, 100 for $1!

I just wanted to say thank you to everyone who helped me out! I made my first bouquets and they turned out soooo good! I was very happy with them especially since it was the first time I made them.
