I bake for fun in my spare time and always bake the day of.
My nephew has asked me to make his birthday cake and I want to get a head start. I have never used fresh fruit between two cake layers.
Can someone give me a timeline for adding fresh bananas? Can I do this the night before?
What kind of frosting is best between layers?
If I frost the cake the night before and decorate the day of the party, will it taste funny?

Thanks for your help.

Im not sure about the fresh fruit, but I almost always decorate my cakes the day before the event, since the day of is normally busy. I have never had a problem with them tasting "funny". I use crusting buttercream and I think it helps to keep in the freshness. If you fill and ice the cake the day before and keep it in the fridge I think it would be fine! Good Luck!
