Cupcake Icing

does anybody know how I can achieve such smooth, rounded icing as such? Do i need to carve the top of the muffin 1st?

I watched one of Nigella Lawson's programs and she actually iced her cupcakes with a Royal icing and she dipped the tops instead of piping or using a spatula.

They look yummy. I could really go for a cupcake now!

I have been on a diet for 2 months (plus have not had a cigarette for 58 days). I have resisted temptation to bake myself a cake or cupcakes but there is a triple chocolate fudge cake mix sitting on my counter now. I keep telling myself to bake it for the grandkids tomorrow, knowing it is me that is dying for a piece of chocolate cake with chocolate buttercream icing. Thanks ladies! That's really quick of you to reply!

I have a feeling it's fondant too. Hmm, have never tried making a cupcake with fondant icing. Will give it a shot soon! But I suspect there's something wrong wif my oven bcoz my cupcakes always come out loopsided. In this case, I do have to carve the top rite?

pastryjen --> hey, that's a good idea! Maybe I should try that method of dipping instead of the usual!

Diane --> wow 19 pounds! Good for you! Hey but you know, what. Go ahead and bake the choc cake and give yourself a treat. A slice will do!

Diane - good for you. I've been off WW for a few weeks. Should get back on track - these treats are still allowed!

Looks like fondant. I put BC on my cupcakes then use the VIVA method to smooth them out. I think royal icing might be a little too hard, just MHO.

In all seriousness, 5 years ago I found out that I had COPD and have been in the hospital more times than I want to count. Have had my left lung operated on and ended up on disability. I have taken steroids galore. If you have ever had any dealings with prednizone then you know how it affects you. I gained 80 pounds. I also quit smoking for 13 months and started back. After the last trip to the hospital I had three doctors lecture me and threaten me if I didn't quit again. My main doctor also put me on a low calorie regimen while I was in the hospital. I have tried to stick with it since I have been out. So.....along with trying to quit smoking, I am trying to lose weight. The two don't go hand-in-hand very well. icon_lol.gificon_lol.gif

Sorry for stealing the thread..........I just got carried away!
