Mousse And Strawberries Between Layers?

Have to do a cake with mousse and fresh strawberries between the layers. Which goes down first--the mousse or the strawberries? And what is the sliding factor? Thanks for the help--Pam

i don't think it matters..but i would put the mousse first

I always put a thin layer of BC down and then the mousse to prevent the cake from soaking up the moisture in the cake. Then, I would put the strawberries. HTH

I just saw a recipe where the strawberries outlined the outer edge of the layer then mousse was placed in the center.

I've made a cake with strawberries and whipped ganache filling twice. I put the ganache first so I am able to spread it easily, and also so that the strawberries have something to stick to. You do have to be a bit careful with the layers b/c they can move around a little. Once I've finished stacking all my layers and frosting though it hasn't been a problem and both times I've had to transport them in a car. icon_smile.gif

I should also add, that I put my ganache straight on the cake. The cake will soak up some of the moisture. I was going for this affect though so if you are not I would do like Kazoot said and put a layer of buttercream.
