How Much Cake?

I have just gotten a call for an order for a wedding rehearsal dinner for 40 people. First this is my first order from someone that I don't know. I have done a few paid cakes but all people I know. Would two 11x15 stacked be enough cake? They only are allowed to take a sheet cake to the resturant so it won't be round or anything. Wow I am so nervous! Just want to make sure I know what I am talking about before I call her back. TIA

yes a single layer 11x15 cut 2x1x3 feeds 48 according to the chart I got off of here, so think it would be just fine! Congrats and good luck!

single layer cut cut into 1" slivers would be pretty small. The good news is that with a square or rectangle cake, it's easy to do the math to figure servings.

Single layers - these pieces will be about 2" tall:
11x15: cut into 2x2" pieces = approx 5 rows x 7 rows = 35 pieces.
11x15: cut into 2x3" pieces = approx 5 rows x 5 rows = 25 pieces.
12x18: cut into 2x2" pieces = approx 6 rows x 9 rows = 54 pieces.
12x18: cut into 2x3" pieces = approx 6 rows x 6 rows = 36 pieces.

Double layers - these pieces will be about 4" tall, wedding cake size:
11x15: cut into 2x1" pieces = approx 5 rows x14 rows = 70 pieces
12x18: cut into 2x1" pieces = approx 12 rows x 9 rows = 108 pcs.
