Okay so I have a bride who booked a cake (two weeks away) and now has decided that she would like to do cheesecake covered with fondant...I have never done this before and I have no idea if it will work....has anyone else done this? What recipes would you use? This is only my second wedding cake and I'm not too sure about it....

Yep, I do it all the time. Any regular cheesecake recipe will work (if you want to make it more sturdy, just add a little more cream cheese to the recipe) and then give it a coat of buttercream to smooth it out and fondant away!

if you want more details, the cake bible has a section on wedding cheesecakes. she has recipes that will serve 150 or 100. so you don't have to worry about doubling your recipes. i bet it will look gorgeous!

My only advice would be to make certain the wedding reception is indoors and not outsside....the one i did was outside and the cheesecake got hot and bubbled so the fondant bubbled too. it wasnt pretty.
