Will This Be Ok?

A friend asked a couple weeks ago if I could do a cake for her in may, I said sure just get back to me on what you want and the day you need it ...well then she hadn't said anything else about it since. UNTIL I told her that my BF had just booked plane tickets to come visit...then she said "well I guess you're not doing my cake then huh?" icon_confused.gif It's the same weekend!!! She needs the cake on Saturday and I have to drive my BF 6 hours away on Friday and will be staying over night. I really want to be able to do this for her but I am just not sure if I can!! the only thing I can think to do is completely decorate the cake on Thursday and just not stack it, wrap it, store it in the fridge and then tell them how to stack it on Saturday. Will it be ok for it to sit that long?? It will be covered in fondant, with pretty simple decorating...probably 3 small tiers.

I had the same question not long ago. One lady told me that she once baked, iced and decorated her cake on a Thursday for Saturday, so I think yours should be fine. However, I've heard that you shouldn't refrigerate fondant, but others say you can so I can't help you with that question. So Sorry!

I had a similar problem a couple of weeks ago. My sister-in-law asked me to making a boxing glove cake (in my photos) for her boyfriend's birthday, but I was flying home for a week to visit my brother, who's birthday is the same day! She really wanted the cake and asked if it could be frozen - I was sceptical and got various different opinions from CC on what would happen to the cake, but we tried it anyway! It was filled with whipped double cream and covered with IMBC and RED fondant, so even after defrosting, it had to be stored in the fridge. Anyway, I called them when I got back and they said the cake was perfect! Not only that, but my sis' BF told me that when he first saw it he thought it was a real glove and wondered why anyone would give him just one glove!!!LOL I was thrilled, especially as it was the first cake I was paid for (other than just engredient cost) and I was really worried about it.

This may not help you much, as different types of fondant may react differently, but just wanted to share my experience.

If you're baking on Thursday for it to be eaten on Saturday, the cake will be fine (I often bake thursday and decorate Friday for a cake needed on Saturday). If the cake will have filling that needs refrigerating, why not do a small practice cake and store it in the fridge for a couple of days to see how the fondant reacts (I think the problem with refrigerating fondant is that when taken out the cake can sweat as it comes to room temp, making it sticky, so you can't touch it, but you wouldn't go prodding a buttercream cake either, so I don't see that as a problem! LOL)

I am taking the Wilton decorating classes and need a cake for them. I make my cake on Sunday nights and have my class on Monday nights and then the cake is eaten on Tuesdays. Even on Wednesdays when the last of the cake is eaten it is still good. I have not decorated it and kept it that long, but I don't see why you can't. Just a thought from an "amateur" (sp).

thanks guys! I am not really worried about the actual cake.... more the fondant drying out and the colors bleeding from the condensation once they take it out of the fridge. It will be pink fondant with black bc

Never thought of the fondant. I am taking the fondant class next month so I don't know much about that, sorry.
