Help Pricing This Cake

I was just asked to do a wedding cake to serve 80 people. I'll probably do 3 stacked tiers. She wants it to be covered in fondant, w/bought ribbon to go around the bottom of the tiers. She is going to supply the flowers to put on top. It's going to be a white cake with key lime filling(which I need to look up to see if I can find a good recipe for that). She also wants to have real lime and lemon circular slices around the border.

My question is:
1. How much would you charge for this?

2. How would you go about putting the lime and lemon slices on the cake without it leaking all over the fondant?

I'm a newbie to this so whatever help you can give me would be greatly appreciated. Thank you.

For a possible answer to your lime slice ordeal, you could sugar your fruit and schellac them prior to adhering them to the cake. I have a few different ways of doing this so PM me if interested.

Here are a few variations on the filling..

Key Lime Filling
5 egg yolks, beaten
1 14 oz can of sweetened condensed milk
1/2 cup of key lime juice (about 20 key limes)
1 teaspoon of key lime zest
2 cups prepared whipped heavy cream


Zest the key limes to get the 1 teaspoon first. Cut them all in half and juice them over a bowl with a little wire mesh strainer thing over it to catch any fruit or seeds. Seaparate the egg yolks and beat them. Pour in the citrus juice and sweetened condensed milk and wilk until smooth. Let chill for 10 minutes.
Take the 2 cups of the whipped cream and fold in a little more than a third of the key lime mixture. Add more whipped cream or key lime mixture until you get a consistency and taste you want.

Key Lime Frosting
1 Cup powdered sugar (sifted, if lumpy)
2 Tbsp unsalted butter
2 Tbsp key lime juice
1/2 tsp lemon extract
pinch salt

Beat the powdered sugar and butter together. Add the key lime juice, lemon extract and salt. Beat until smooth. Correct the consistency, if necessary, with extra powdered sugar or extra lime juice.

Key Lime Cream Cheese Filling
8 ounces cream cheese, softened
1 egg
1/2 cup sugar
2 tablespoons lime juice, preferably Key lime
1 teaspoon lime zest

Beat together cream cheese, egg, sugar, lime juice, and zest until well mixed.

Now I would not charge any less then $250.00 and that is a LOW BALL figure, IMHO. HTH!!! Good luck and have fun!!
