Hi Ratio Shortening

Anybody heard of penguin shortening? I asked my local cake supply store if they had hi-ratio shortening and they have this one he also said it was ps99? not sure what that means. any replies would be great.

Don't know about penguin brand specifically, but ps99 is a commercial Hi ratio shortening usually sold in large cubes. It's used in bakeries. That's all I know ... sorry.

I spent the better part of this morning reading every thread here about Alpine, Sweetex and hi-ratio shortenings as well as on other websites. icon_eek.gif

On a thread from here, "PS99" was mentioned and would never be used again. Like I said, I read a whole lot of info and can't remember which one that came from.... If you do a search here for "Alpine", "Sweetex" or "hi ratio shortening", you might could find the specific one I'm remembering.

i just went to a DOS in texas last weekend and one of the demonstartors used penguin in her icing and it looked great and tasted great
