How long will fondant figures stay good? I would like to make my figures a week in advance and I just wan't to make sure they would still be okay. What is the best way of storing them? One more question. Once I put them on the cake is it alright to put the cake in the frig? I thought I heard that you shouldn't do that. I am using MMF. Thanks

they will stay good for quite some time.....I've used flowers etc. on practice cakes that were well over a month old and they still tasted great!!! Make sure to keep them in a sealed container, once they're as dry as you like, and keep them out of sunlight!!!!!!!! Even if they're not in direct sunlight, they can fade and turn nasty colors ...make sure you keep them in a cupboard or something! As for putting it in the fridge...it all depends on the humidity in your fridge, it can make the figures go soft or if it's too humid they can get slimy and gummy....You might want to add them at the last minute...and depending on the filling and icing on your cake the whole thing might be fine at room temp. for up to a wekk with no worries.

You can make them a couple weeks ahead of time. You can store them in a box but do not seal the lid on the box, have it loose. Moister make it get soft, by having some air circulate they will stay hard. I would not but them in the fridge, mositer can make them soft. Good luck, look forward to seeing the cake.
