My good friend is letting me make her 21st birthday cake for her in June. (She gets a free cake and I get some practice icon_biggrin.gif) She's decided on a Luau theme and I browsed through the cakes in the gallery and decided to use this as inspiration.

Minus the Dora the Explorer toys and beach hut obviously. I'm going to try and find some palm trees and hula girls to go on top, and the Wilton flip flop candles.

Water will be buttercream (crisco) and the beach layer will be buttercream with probably crushed vanilla wafers on top. I asked what kind of filling she wants cause I didn't want to do just plain buttercream. She wants white cake but doesn't know about filling. I suggested rasberry but she doesn't like it. She loves cherries though. I was wondering if you can use cherry pie filling as a cake filling. Do you think that would taste good with white cake and buttercream? The only other thing I could think of was making it a cherry chip cake.

Any other cherry filling suggestions I can run past her? Thanks!

The cherry pie filling in the can: I use it quite a bit, but it is rather bulky, so don't over-fill. It tastes great! Don't combine it with BC; it will curdle!

It tastes okay with the buttercream on the outside of the cake though? I just wasn't sure how those would go together.

I'm really stumped as to whether I should fill a white cake with cherry or make a cherry flavored cake and fill it with buttercream.

Yes, BC frosting is good. That's the combination I use.

Thanks for your help. I think I might do one tier with the cherry filling, and the other cherry flavored cake. Cover all my bases. icon_smile.gif
