When To Make Cake

How far in advance do you make your cakes for a customer?

If they are picking up a cake Sunday at noon- do you finish decorating and finalizing it Sun morning OR is it finished on Saturday?

If you do it ahead of time, how do you store the finished product?

I like to have any cakes done the day before I need them, if it's for a paying customer it gives me time if I have problems and if it's for home I have time to get ready for whatever the cake is for.

I mostly make cakes that are covered with bc that is shelf stable so I usually stick them in a box and stick them somewhere out of the way and out of my 3 children's hands.....and definitely nowhere that any of my pets could reach it LOL Oh and I definitely like to finish mine ALL the day before they are being picked up so if I need to pull an all nighter for whatever reason then I can!

Baked daughter's baby shower cake on Thursday; party on Sat; ate leftover cake the next wed (7 days later). STILL tasted as good as Day One!

I bake the cake a few days before and decorate 1-2 days in advanced. I am always nervous something is going to go wrong. The WASC which I never put almond flavoring into...just double the vanilla and 2 boxes of vanilla pudding (the family looooves it) stays nice and moist for which seems like forever. I made this cake on a Sunday and the next weekend they were still eating leftovers!

If I have a cake due on Sunday, I would bake on Friday morning. Once the cake is cooled I wrap it and stick in the fridge until Saturday am, The coolness makes it moist and even firms it better for leveling & frosting. Once I have decorated it on Saturday, I box it and stick it back in the fridge so that the frosting can get firm and heat from doing other cooking doesn't effect the texture of the frosting and melt it off. The frosting seals in the moisture and freshness, so it should be fine if you had to leave it out.

I always have mine completely done the day before its due.

I store them in our motorhome in our garage; not as cold as the fridge, but cold enough.

My cakes never get dry cuz I use the extender recipe which makes them really moist. Even after a week of storing them. thumbs_up.gif

i usually bake my cakes the week of and stick in the freezer after it cools.. i find it easier to ice the cake when still frozen.
