I have a customer that has requested me to do a 3D replica of a building he's remodeled for his grand opening.
I am planning on doing (4) 1/2 sheet cakes stacked as "2 tiers" even though they're the same size.
I plan to cover it in fondant. I'm not quite sure how to do this part, I'm relatively new to fondant and I'm not sure how to handle such a big cake with fondant. Should I do it with one piece of fondant? Or somehow divide it up?
I JUST watched the food network challenge for the awards - and Collette had problems with her fondant (i actually dont think it was fondant but choco-pan), but she divided it up so they put the top fondant on first in one piece and the sides with another piece of fondant, and they seemed to have problems with it sliding down.
Bronwen on the otherhand did it in separate pieces as well for her TV and she overlapped them so it would stay in place. I thought this might be the way to go for my building cake, but how do I make the fondant smooth where it overlaps (so there's not a bump?).
Another area of problem:
The front of this building is full glass windows - what is the best way to represent windows? I've thought about just airbrushing the fondant with a deep blue... otherwise my customer mentioned maybe doing it with sugar (he's a huge Ace of Cakes fan). Any thoughts there?
You can piece them together just fine. I do not overlap and I did not see Bronwen overlap. I have seen her demo before and the edges just meet. You can do pour sugar but the front piece would have to be made dry in order to pour. I did windows for my gingerbread house and use melted isomalt. They were very clear and stayed clear for weeks.
Modeling chocolate could be a option also. If you are piecing you can easily hide seams with trim and such.

I agree that modeling chocolate would probably have the best result, however I've never used it and I'm not sure if I want to try something completely new on such a large project.
I think I'll stick with the fondant and piecing it together, and then I'll be hiding the edges with trim pieces.
I'm still not sure on the glass. I'm not familiar with the IsoMalt, is there a recipe for it? Or is it just purchased?
