Has anyone tried this?

On a whim I bought Soy Milk to try, not thinking about the cakes I might make!

Does it affect the taste/texture at all?

I substitute rice and soy milks on a regular basis. It has always worked fine. Sometimes it seems to take a few extra minutes to finish baking.

the only way is to try

I remember as a child ( I was allergic to milk ) my grandma thinking she was doing good made me custard from soy milk.... YUCK she was so mad I would not eat it.... BUT that was 45 years ago and the soy milk has improved.

Can you sour soy milk to use as a buttermilk substitute?

I have heard that you can add 1 tsp of lemon juice or of vinegar to one cup of soy milk to make a buttermilk substitute. The vinegar makes thicker "buttermilk" than the lemon and you may want to use a touch more or less.
I haven't personally tried this yet, but it sounds plausible. If the idea is too get the acid level up so the chemistry stays similar, it OUGHT to work. It's supposed to work for regular milk too.

I you try this, please let me know if it works for you.

I make sour milk all the time with vinegar or lemon juice and milk. I'll have to experiment with the soy milk. I'm lactose intolerant and it's getting really bad! Soy milk taste terrible! My favorite recipes call for buttermilk so I'll try the vinegar or lemon juice. Will keep you posted.
