I was watching a cake challange with C. Peters & she stated that she puts fondant on her cake when it's still real cold so the cake will hold up to the smoothing. Does anyone do this? I freeze my cakes a couple of days before I decorate, and let the cake set out for several hours before I ice & decorate. I thought that putting fondant (or bc for that matter) on a frozen cake would mess up the consistency of the fondant/bc?
I've never done this, but I think I'm gonna give it a try this weekend...I'll let you know how it goes. I'm interested to see what others have to say from experience though.

COLD does not mean FROZEN..... you can get it real cold just by putting it in the refridgerator... A frozen cake will make your fondant "sweat",and you will have one heck of a mess........

I was referring to the cake being cold.
I also have heard that the fondant will sweat. How long after removal from the freezer can you put the bc &/ fondant on the cake?
Thx
I don't do this all the time but I've actually put fondant on a cake that was still frozen. I did have some condensation and the fondant looked a little odd for a while but I left it alone and it dried after some time and looked just fine. It was the lilac wedding cake in my photos. I spoke with the MOB after the wedding and she said the cakes tasted really good so it didn't affect the flavor of the cake either. I use Satin Ice fondant now and they say you can actually freeze their fondant but I haven't yet tried that so I can't say from experience how that turns out.
