Hi everyone,
I made this cake for my nephew's birthday. It's a Double Chocolate Layer cake with Bittersweet Chocolate Frosting. I was wanting to try something new and this is it. I'm still deciding how I feel about it. I don't think I like it but maybe I can't decide because it just looks so odd. Maybe I really should try to find some classes to attend.

Do y'all think the chocolate pieces on top wouldn't look so dirty (they really aren't... it's the wax paper they were on) if I sprayed it with spray oil lightly? I think that is what is bothering me about it.

I would not spray oil on it, but I can see where you are coming from.. I think it looks good... icon_smile.gif

For the next time I make a cake like this how can I prevent the chocolate pieces from looking like these do... They just don't look very smooth.

If you do your choolate work on acetate it will come up shiny. The cake looks great though! thumbs_up.gifthumbs_up.gif

Well once you pointed out that the chocolate pieces and I quote "looked dirty" I had to go back and check out the photo again. It looks fantastic. Your cakes are so awesome. Only a perfectionist would notice that.

Thanks everyone. The cake was a big hit at the Birthday Party. No one except me noticed that the chocolate pieces looked dirty LOL My brother-in-law told me that he's not big on eating cake but that my cake was so delicious he couldn't stop eating it. He specifically said it was the bitter taste of the frosting icon_biggrin.gif I was so happy that everyone enjoyed it. I was afraid that they wouldn't like it. My BIL also asked me how much a cake like that would cost and I told him that without the chocolate pieces on top that I charge $35 and with $40. He was so nice and told me that it was worth double that icon_smile.gif Of course, I made the cake for free. That was my gift to the birthday boy. They have 2 more children that have birthdays real soon LOL I was informed that I would be doing those cakes as well!!!

Someone mentioned using acetate sheets; another similar suggestion would be to try using regular overhead transparency sheets. HTH!

What kind of chocolate did you use for the decorations? If you used real chocolate and not candy melts, it may have "bloomed". This is caused by not tempering the chocolate - melting and cooling the chocolate to the right temperature. HTH

I'm not sure I'm seeing the cake like you do. I don't see anything "dirty" looking at all. I just see a lovely cake with a lot of "wow" factor. And, if you're talking about your "leaves" having a matte finish, then yeah, the suggestions about using acetate or transparency sheets will solve that. Just put the "bottom" side toward the viewer. I also use laminating sheets for various things like that (FBCT, piping gel transfer, etc.). I happen to have a box of 100 and don't make a lot of laminates, so they're plentiful and handy. I think all that kind of stuff is close to the same substance.

IMHO, waxed paper is one of the most useless products in our kitchens. I have some, but can't remember why.

BTW...the white lattice in the leaves...is that a cutter or piping? It's lovely, whatever it is.
