I am too tired to legally be baking, and of course, I made a mistake. I am baking an 11x15 for tomorrow, and when the time was up, I went to pull it out and the middle was obviously not done under the crust. So, I realized I never put in the sprayed flower nail. In desperation, I sprayed it and dropped it on top (base side out) and it sunk a bit into the cake, but it turned out great (I did this about the last 10 minutes).
Just an FYI if you are trying to rescue a cake!

It helps distribute the heat throughout the batter so that the middle cooks at a rate closer to that of the edges. It keeps it from forming a lake of gooey batter in the middle of the cake. ![]()
I really should start baking more when I am tired... then I was trying to figure out how not to crack the cake when I went to put it on the board. So, I placed the pan it came out of back on top of it (as if I had never taken it out of the pan), flipped it with the cooling rack so the bottom (the part you see when you bake it) was up, removed the cooling rack, placed the board over it, and flipped it back over. VOILA! No cracked cake, and perfectly placed. ![]()
