I was looking at Earlene's cake serving chart and I have a question...does anyone know what height of cakes (or number of layers) she is basing this on?

I think I figured this out myself. It's for one layer.

I do wonder though...this calls for 2" cake pans. The regular old round pans are not 2" are they?

Most of my traditional 'sandwich' pans are only about 1 1/2in deep, so I always make 2 layers regardless, and I still base my servings on Earlene's chart - just means my customers get to serve deeper pieces!

Pretty sure that her chart and Dolores McCannes (sp) are the same. It would be 2 layers and each layer would be 2 inches high. Each tier would be 4." If anyone knows how I could get my cakes 4" inches high let me know. I use the strips. I use the rose nail. and on and on.
