So I am making a castle cake for my DD's 4th birthday. I want to use the brick impression mold. Do I press the fondant into it before I put it on the cake or after? I assume before, but it seems like it might stretch when putting it on the cake, but I don't see it working doing it once the fondant is on the cake either.

Also, what thickness should the fondant be? any other tips or hints in general with impression mats?

I haven't tried it but the one I saw on FN tv (Ace of Cake) where Geof made the bricks for the castle... it looks like 1/8 and he did it before he put on the side of the cake.

I saw on some cake competition recently someone did a castle cake and for the outside walls they put the fondant on then the brick impression mat and rubbed it with a fondant smoother. Looked pretty good when they were done! icon_smile.gif

I think the fondant is BEFORE, and butter cream is after it is crusted on the cake.....

I would roll out the fondant measure your sizes for the castle and do the impression.Then let the fondant sit for a few minutes to stiffen a bit and then you can adhere it to the sides.If you do it right away the fondant is too soft and floppy unless you are putting it on the entire side of a cake in which it wouldn't matter to stiffen.
