Cupcake Icing

just got an order for cupcakes (never done them before) and she wants them tommorrow AM, and wants 16 dozen (it is 3 pm here)! i may not know a whole lot, but i sure knew i couldn't pull that off without an ounce of ingredients on hand, transport boxes, and experience, etc. i had to say no! icon_confused.gif
(plus i just don't feel like it - im having a baby any day and 1C dialated!!!) icon_surprised.gif

anyway, it got me thinking about cupcakes! and i'd love to know what icings ya'll use. i love the look of the swirly top (easy) and the shiny, silky, soft looking icing. what IS that icing? antonias icing comes to mind - i bet its her IMBC. but there must be something easier/quicker?

i did do a search and after sifting through 100+ posts with 15 more pages to go, i thought, one more post won't hurt will it? icon_wink.gif thanks in advance to all you experts out there!

My usual is my regular buttercream (1/2 butter, 1/2 shortening) or chocolate buttercream (same basic recipe plus cocoa). I've recently tried a chocolate syrup icing that went over really well. I added extra powdered sugar to it so it could be piped plus it has a bit of a shiny quality that I like.

buttercream and use one of those huge white plastic tips to give that wonderful swirly effect or tip 109... but the large plastic jumbo ones are great. I think nati posted a pic of these tips in one her posts.

oh thank you nati! that was an awesome thread. been offline a couple weeks - but that will be very helpful. thanks everyone for the buttercream tips. that is what i'll use for sure.

Nati - thanks for asking! my little bub is still baking!!! shouldn't undercook those little ones. being a first time mom, i thought it meant something to be dialated and at your due date, ha ha, but i now know it means nothing icon_eek.gif !! im a week and a half overdue now, but hoping he'll spring into action this weekend !??!! still holding out on the castor oil until more desperate. we'll see!! take care... icon_smile.gif

Giggle, I'd like to say it brought back memories, but my mom was the one who did the castor oil. She was 2 weeks overdue with me, her mom was having to leave in a few days. Yup, she did castor oil, make sure you are dropped and head down, I was a butt breech, and she was 17! icon_eek.gif Good Luck Girl!! Timing and Presentation is everything isn't it??!
